Fagiolini alla Peperanata


(Green Beans with Tomato and Bell Pepper Sauce)

2 large ripe tomatoes chopped
1 large red bell pepper
1 onion, sliced
1 lb green beans blanched
3-4 tablespoons olive oil
salt and pepper
1 tablespoon fresh parsley
1/2 teaspoon dried oregano

Saute the onion and pepper in olive oil. Add tomatoes and herbs. Simmer 5 minutes. Add blanched green beans and simmer 5 to 10 minutes more.
