Chicken Cordon Bleu Sandwich
Light Dinner Variation
1 boneless skinless chicken breast
1 slice of ham
1 slice Swiss cheese
1/2 cup seasoned bread crumbs
1 egg slightly beaten
vegetable oil for frying
Ranch Sauce ( 3 Sauces for Sensational Sandwiches )
Tortilla Roll up
1. Place the chicken between two pieces of plastic wrap and pound
until about 1/8" thick. Discard plastic wrap
2. Dip the thinned chicken into egg followed by bread crumbs.
3. Fry the coated chicken in a deep fat fryer or fry pan until golden brown.
4. Set on paper towels to drain and cool. Cut into long, thin strips.
5. Lay tortilla flat and place half the chicken down the center.
Cut the ham and cheese in half and lay it the length of the tortilla.
6. Dress with the ranch sauce and roll. For melted cheese place the entire
sandwich under the broiler for a few minutes.
Quick Lunch Variation
1/2 cooked boneless chicken breast
1 slice ham
1 slice of Swiss cheese
Ranch Sauce (link above)
1. Shred leftover chicken or boiled chicken breast kept on hand.
Lay down the length of a tortilla roll up. Add slice of ham and cheese.
2. Dress with the ranch sauce and roll.
