Baby New Potatoes w/ Tomato Topping

3 lb. baby new potatoes

Tomato Topping

2 tbsp olive oil
2 cloves garlic, crushed
1 leek, chopped
3 cup crushed tomatoes
1 tbsp tomato, paste
1 tbsp sugar
1 tbsp fresh oregano, chopped
2 tbsp fresh basil, chopped

 

Clean and scrub new potatoes and place in foil packet. Brush potatoes with olive oil and seal packet.

Heat on medium-high grill for 30 minutes.

Remove potatoes from foil and top with tomato topping and fresh basil for garnish.

Tomato Topping

On side burner heat oil in a medium skillet.

Add garlic and leek and cook for 6-8 minutes, stirring until leek is soft.

Add tomatoes, tomato paste and sugar. Stir. Reduce heat and simmer uncovered for 5 minutes.

Stir in fresh herbs.
