Apple-Stuffed French Toast

1 loaf cinnamon bread, cut into 1&1/2-inch slices

1/2 can Comstock Premium Apple pie filling, diced
8 oz. Philadelphia cream cheese
2C milk
3 eggs
1 tsp. vanilla
4C Special K cereal, crushed
1/4C butter, melted
Maple syrup to taste
 
Pre-heat oven to 350°.  Place cream cheese in bowl & let sit at room temp. 1/2 hour to soften.  Add diced apples into cream cheese & gently fold together.  Cut bread into 1&1/2-inch thick slices.  Using a sharp knife,  cut a pocket into one side of each slice of bread (do not cut all the way through).  Using a spoon, gently fill each bread slice pocket with the apple/cream cheese mixtures until filling is gone.
 
In a medium bowl, blend together the eggs, milk & vanilla.  Place cereal in another bowl & crush slightly.  Dip each slice of stuffed bread into egg mixture, flip over to coat, place in Special K and press cereal gently on bread to coat.
 
Heat non-stick sauté pan over medium heat until hot.  Add approximately 1 tablespoon butter.  Cook French toast, 2 slices at a time, until golden brown on each side (adding more butter as needed).  Place cooked French toast on sheet pan and place in pre-heated oven for 5-10 minutes or until hot.  Serve immediately with melted butter & maple syrup.
