Cocktail Reuben's
Submitted by Cindy in Maple
If you enjoy a good Rueben sandwich, piled high with corned beef,
you'll love to serve these appetizers. (Just be sure to leave some for
your guests!) If you prefer, you can substitute sliced turkey for the
corned beef. Valtrompia bread is a small loaf baked in a decorative
shape--stars, hearts, and so on. You can buy the shaped tubes to bake
your own, or find ready-made bread at a bakery or grocery. Or, you can
substitute any kind of regular or rye bread. Makes about 24 slices.
2.5 ounces processed sliced corned beef, chopped
1 cup sauerkraut, drained
1/2 cup shredded Swiss cheese
1/2 cup Thousand Island salad dressing
1 loaf Valtrompia bread, thinly sliced
Preheat oven to 375 degrees. Mix together corned beef, sauerkraut,
cheese, and dressing. Arrange slices of bread on an ungreased baking
sheet. Top each slice of bread with Reuben mixture.
Bake 10 to 12 minutes, until cheese is melted. Serve warm
