2 cups sweet potatoes, raw, finely grated

1 cup evaporated milk

2 eggs, well beaten

3/4 cup dark corn syrup

1/4 cup melted butter

1 teaspoon grated lemon rind

2 teaspoons lemon juice

1/2 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1/2 cup brown sugar

Grate potatoes into a bowl with the milk so they will not darken. Mix ingredients in order given. Pour into a greased shallow baking pan. Bake in a 350 degree oven for 30 minutes; stir with a fork. Bake 15 minutes longer or until brown and crusty on top.
6 to 8 servings.
