Five-Alarm Barbecue Rib Sauce
2 racks pork back ribs or beef ribs
(about 4 lb/2 kg)
Sauce:
1/2 cup each: maple syrup, ketchup
3 tbsp hot pepper sauce
2 tsp each: onion powder, garlic powder
1/4 cup hickory flavoured, bottled barbecue sauce
Trim fat off ribs. In large saucepan, cover ribs with water. Bring to a boil; reduce heat and simmer, covered, for 1 hour and 15 minutes.
For sauce, in bowl, combine maple syrup, ketchup, hot sauce, onion and garlic powders and barbecue sauce. Makes 1 1/3cup.
Drain ribs. Brush lightly with oil. Cook on preheated barbecue on high until crisp, about 5 minutes, turning to sear both sides. Brush with sauce and cook about 5 minutes more. Serve remaining sauce at table.
