A Different Cranberry Sauce
1 lb fresh cranberries
2 tsp grated fresh orange peel
3-4 pears, unpeeled, cored & coarsely chopped
3/4 cup sugar
1/2 to 3/4 cup Ruby Port
Finely chop cranberries in food processor using pulse button. Transfer to a
large bowl.
Finely mince orange peel in sugar with sugar. Add to berries. Add Ruby Port. Cover &
refrigerate at least 4 hours before serving. Can be
prepared several days ahead.
Makes 5 cups.
