Cucumber Chicken Pita Sandwiches

A very refreshing, Greek-inspired pita wrap, great to serve on a hot day. From a wonderful little checkout stand cookbook called, Dinner on the Double, by Better Homes and Garden.

1/2 cup plain yogurt
1/4 cup cucumber -- finely chopped
1/2 teaspoon dried dill weed
1/4 teaspoon dried mint
4 large pita bread
4 lettuce leaves
6 ounces thinly sliced fully cooked chicken breast
1 tomato -- thinly sliced
1/3 cup feta cheese -- crumbled

First make dressing: Stir together yogurt, cucumber, dill weed and mint in a small bowl.

For each sandwich: place a pita round on a plate. Top with lettuce, chicken and tomato. Spoon dressing on top. Sprinkle with feta cheese. Roll up each pita and secure with toothpicks or wrap in foil. Serve immediately.
