Cucumber Relish

12 lge English cucumbers

4 lge onions

1 lge green pepper

1 lge red pepper

1-1/2 pints white vinegar

1/2 cup flour

3 cups sugar

2 tbsp celery seeds

2 tbsp mustard seeds

2 tbsp dry mustard

2 tbsp turmeric

2 tbsp pickling spices or table salt

 

Finely chop the first 4 ingredients and add 2 tbsp pickling spice or salt. Let stand 4-5 hours then drain well. Combine the remaining ingredients with the cucumber mixture and bring to a boil, stirring carefully, 5 minutes or so. Bottle in sterilized jars and store in cool place.
