Caramel Bonbons

Prepare Almond Shortbread dough, halving the vanilla & almond extract. Beat
1 egg yolk into the butter/sugar mixture. Divide dough into 20 equal balls. Cut
5 caramel candies into quarters. In the palm of your hand, flatten one ball into
2" round. Press a piece of caramel into center of dough & securely
pinch closed. reshape the dough into a ball & place on a lightly greased
baking sheet. repeat with remaining dough & caramel pieces, spacing bonbons
2" apart. brush tops with slightly beaten egg white, sprinkle with coarse decorating
sugar crystals. Bake at 350F for 12-14 minutes or until lightly colored. Be
careful not to over bake or bonbons will split. Transfer to wire rack to cool.
Make 20 bonbons.
