Banana Nut Loaf

1 cup of sugar

2 cups of flour

1 teaspoon baking soda

1 teaspoon salt

1/2 cup cooking oil

2 eggs beaten

3 very ripe bananas mashed

3 tablespoons buttermilk or sour milk

1/2 cup chopped walnuts or pecans

Mix flour, baking soda and salt together. Set aside. In a mixing bowl add sugar to cooking oil and fold in beaten eggs, mashed bananas, sour milk and nuts. Add the dry ingredients and stir only until moistened. Bake in a buttered loaf pan in a preheated 350 ° F oven for one hour.

 

Note: For the sour milk you can use fresh milk to which you have added 1 teaspoon of vinegar or lemon juice and mixed.
