7-Up Salad
2 (3 oz.) packages lemon Jell-O
2 cups boiling water
2 cups 7-Up Soda
1 (20 oz.) can crushed pineapple (drain an reserve juice)
3 sliced bananas
1 cup small marshmallows
Topping:
1 cup pineapple juice
1/2 cup sugar
2 Tbls. flour
1 slightly beaten egg
2 Tbls. butter
1 cup Cool Whip
In a mixing bowl, combine Jell-O, boiling water and 7-up;dissolve Jell-O and
refrigerate until Jell-O mixture is thickened. Add crushed pineapple, bananas
and marshmallows to thickened Jell-O; mix well. Return to refrigerator and let Jell-O
set completely. In a small saucepan, combine pineapple juice, sugar, flour and
egg. Stir over medium-high heat until thickened; add butter and let cool. When
mixture is cool, fold in Cool Whip. Frost top of Jell-O salad for a wonderfully
refreshing salad!
