Zesty Marinara Sauce

1 tbsp olive oil
1 lge onion, diced
2 lge garlic cloves, crushed
1-6oz can tomatoe paste
2 tbsp minced fresh parsley
1-1/4 tsp Italian seasonings
1/2 tsp dried basil
salt & pepper to taste
2 tsp sugar
1/8 hot pepper flakes
1 cup water
1/4 cup red wine
1 bay leaf
1-8oz can tomatoe sauce
1-16oz can crushed tomatoes
1/2 cup Parmesan cheese

Heat oil in a large skillet & sauté onion & garlic till limp. Stir in tomatoe paste, parsley, herbs, sugar, pepper flakes, salt & pepper to taste. Cook 3-4 minutes, stir often. Bring water, wine, bay leaf, tomatoe sauce, tomatoes & juices to a boil. Add tomatoe paste mixture  & simmer 1 to 1-1/2 hours, remove bay leaf. Serve over cooked pasted topped with Parmesan cheese.
