Souvlaki
Serves 4
1 lb pork shoulder butt, cut into 1-1/2" cubes*
1/2 cup fresh lemon juice (or ReaLemon)
4 tsp olive oil
4 tsp dried oregano
4 cloves garlic, crushed
4 kebab skewers
Mix lemon juice, oil, oregano & garlic together. Add pork & marinate
2 hours or overnight. Remove pork from marinade & thread onto
skewers. If using the broiler: line a baking tray with foil & place
kebabs on tray. Broil 5 minutes, turn & cook 5 minutes more basting
with the marinate. Serve with a Greek salad & a rice dish. Tzaziki
sauce or sour cream on the side.
I cook these on the barbeque, turning & basting with the marinade.
** If you marinate overnight, boil the juices before using them to
baste.
Any leftover juice after basting, serve on the side.
Tzaziki Sauce
2 cups plain yogurt
1/2 English cucumber, peeled & grated
2 cloves garlic, crushed
3 tbsp olive oil
1 tsp salt
Mix all together & refrigerate till using, about 1 hour before.
