Potatoe Pancakes
 
7 medium potatoes
1 large onion
2 eggs
1/2 tsp salt
dash pepper
3 Vitamin C tablets*

Fill large pot with water & drop the Vitamin C tablets in it. Peel, cube potatoes & place in pot.

In a food processor, add potatoes to just below the level of the center column. Add 1/2 1/2 tsp of the water. Process until the potatoes are the consistency of hand grated potatoes. As you empty the processor, place in a container, such as a large pot so that the potatoes are well covered till you process the rest.

Quarter the onions & drop in the processor with the potatoes as you process.

Add salt eggs & pepper.

Fry in vegetable oil or bacon fat by dropping a large spoonful of batter, cook until golden brown.


Drain on paper towels.

Serve with sour cream.
