Pasta Salad w/ Spinach
8 cups torn spinach
8oz cooked fusilli (any pasta will do)
2 tbsp chopped garlic, or more
2 tbsp olive oil
1-14oz can white beans
2oz shredded Asiago cheese
( Parmesan, Romano or Mozzarella)
Put the spinach, beans, olive oil & garlic in a bowel. Put the cooks pasta
on top of this. Cover the whole thing until the spinach wilts & the cheese
has melted. Toss together. Best served at room temperature.
