Lemon Butter Sauce
From Macaroni Grill
1 tbsp shallots, minced
1 tbsp fresh garlic, minced
1/2 cup dry white wine
1 cup heavy cream
1/2 cup lemon juice, fresh squeezed
1/8 tsp white pepper
1 lb lightly salted butter..cut into tbsp
Melt 1 tbsp butter in a large skillet over medium heat. Sauté' onions &
garlic till translucent. Add white wine & reduce sauce to slightly more than
1/2 whisking occasionally. Add cream & reduce by 1/2. Add lemon juice &
reduce by 1/2. Add white pepper. Reduce heat to low. Add remaining butter 2 tbsp
at a time, whisking continuously after each addition to completely incorporate
butter. Continue whisking until sauce just coats spoon.
I use this on fish, rice, pasta, grilled chicken or any combination.
