Fettuccine w/ Creamy Tomatoe Sauce
 

1 tsp olive oil
1 med. red onion, chopped
2 garlic cloves, chopped
1- 14oz can diced tomatoes in puree
4 tbsp minced fresh parsley
3/4 tsp dried oregano
3/4 tsp ground black pepper
1/2 tsp salt
1- 4oz pkg mild goat cheese, softened
2- 9oz pkg spinach fettuccine or other fettuccine

In large nonstick skillet, heat oil over medium heat. Add onion & garlic; cook 5 minutes until onion is softened.

Add tomatoes, parsley, oregano, pepper & salt & cook 5 minutes stirring occasionally. Add the cheese to sauce & cook stirring until cheese melts. While cheese in melting, prepare fettuccine; drain. Toss pasta with sauce & serve immediately.
