Casserole Florentine


1 pkg frozen spinach, thawed & dried
1 can Cream of Mushroom Soup
1 garlic clove, minced
1/2 tsp ea. tarragon & marjoram
salt & pepper to taste
4 cups cooked noodles, any kind
1lb sweet Italian sausage,
cooked, chopped & drained
1 lge onion, chopped
1 egg
1-15oz Riccota Cheese
1 tomatoe, seeded & chopped
Parsley

Combine spinach, soup, garlic & seasonings in a small bowl: spread evenly over noodles in a buttered 3qt casserole dish. Distribute sausage over spinach mixture & sprinkle onion over top. Blend egg into riccota & spread over all. Bake in preheated 350F oven 25-30 minutes or until golden, then allow to cool.

Top with garnish of tomatoe & parsley.
