Cara Mia Chicken

1 lge frying chicken, cut up or chicken breast, boned & skin removed
1 sm. jar marinated artichoke hearts
2-1/2 cups canned tomatoes
2 cloves garlic
1 tbsp salt
1 tbsp Accent (optional)
1/2 tbsp oregano
1/2 tbsp basil
1/2 tbsp pepper
1/2 lb fresh mushrooms (or more)
1/2 cup dry sherry

Season chicken with a little seasoned salt & garlic salt. Dip chicken pieces in Bisquick. Place in pan & bake for 1/2 hr. 350F

Combine tomatoes, artichoke, garlic, mushrooms & all spices in a pan & stir. When thoroughly mixed, pour over chicken, cover & bake at 350F for 1 hour.

During last few minutes, add sherry. Serve, garnish with chopped fresh parsley.

Best cooked 1 day ahead & reheated.
