Caramelized Onions & Pasta

2 tbsp oil
1-1/2 cups onions, slice thin
1/2 tsp salt
1/2 tsp sugar
1 tsp dried basil leaves
1/2 tsp dried thyme leaves
1/4 cup Cabernet Sauvignon
freshly ground black pepper
1/2 cup water
2 tbsp balsamic vinegar
12oz dried pasta (bow-ties, rotini, penne)
fresh grated Parmesan cheese
Fresh herbs to garnish
(basil, thyme, Italian seasoning)

In a large non-stick skillet heat oil. Add sliced onions & cook over high heat until onions start to brown.

Lower heat, add salt, sugar & spices. Cook 10 minutes, stirring often until onions are uniformly caramel in colour. Add water, vinegar & wine then cover. Simmer while pasta is cooking. Cook pasta according to directions & drain well.

Divide pasta equally among 4 bowls. Top with equal portions of caramelized onions & sprinkle parmesan cheese over top.
