Buttermilk Waffles
 
2 cups flour
2 tsp baking powder
4 tbsp sugar
1/2 tsp salt
2 eggs
1-3/4 cup buttermilk*
4 tbsp melted butter, cooled
2 egg whites**

Combine flour, sugar, baking powder & salt. Add the eggs & buttermilk & mix at medium speed till smooth. Add the melted butter & mix till incorporated. In another bowl, beat the egg whites until stiff then fold into batter. Heat your waffle iron & cook your waffles as usual.

*Substitution for buttermilk: Mix 2 tsbp of vinegar or lemon juice to 2 cups of milk.

** For the egg whites I used, "Just Egg Whites" which can be purchased at your grocer in a 1 pint container. Just like the Egg Substitutes come.
