Breakfast Quiche

1  9" pie shell, unbaked

1/2 pound Sausage, cooked and drained

2 cups Cheddar cheese, shredded

2 cups Potatoes; raw, shredded, rinsed in cold water

5 Eggs, well beaten

Salt

Pepper

 

Spread sausage evenly in bottom of prepared pie shell. Sprinkle cheese, then potatoes, over sausage. Pour eggs over all. Bake at 425 degrees for 5 minutes, reduce heat to 375 degrees and bake 45-60 minutes, until lightly browned and well set.
