Basic Tomato Sauce

1-28oz can diced tomatoes
2 med. garlic cloves, peeled
3 tbsp extra virgin olive oil
2 tbsp coarsely chopped basil leaves (8)
1/4 tsp sugar
1-1/2 tsp salt
3/4 lb pasta
Process garlic through press into small bowl. Stir in 1 tbsp water. Heat 2
tbsp oil & garlic in a 10" sauté' pan over med. heat until fragrant
but not brown, about 2 minutes. Stir in tomatoes & simmer until
thickened slightly, about 10 minutes. Stir in basil, sugar & 1/2 salt.
Meanwhile, cook pasta until al dante in large pot of boiling salted water.
Reserve 1/4 cup of cooking water, drain pasta, & transfer back to
cooking pot. Mix in reserved cooking water, sauce & remaining oil
& salt. Cook over medium heat for 1 minute, stirring occasionally
& serve immediately.
