Baking Sheet Cornbread
1/2 cup flour
1/4 cup finely ground whole-wheat and barley cereal
1 1/2 cups white or yellow cornmeal
1/2 tsp. salt
1 tsp. sugar
2 tsp. baking powder
3 eggs, lightly beaten
1 cup light cream
1/2 cup butter, melted
Preheat oven to 375 degrees. Generously butter a 15x10x1-inch baking pan.
Mix together flour, cereal, cornmeal, salt, sugar and baking powder. Beat eggs
with cream and add to dry mixture. Stir in melted butter. Mix well. Spread
batter in prepared pan. Bake for 18 minutes or until golden and done. Cut into
squares. Serves 15-20.
