All-American Cornbread

2 Cup Biscuit Mix
1 Cup Butter (I mix half margarine and butter)
1 Cup Half and half
1 Cup Yellow cornmeal
1/2 tsp baking soda
1/2 tsp salt
3/4 Cup sugar
2 eggs, slightly beaten

 

Scald cream with butter, add to thoroughly mixed dry ingredients. Mix in eggs. Pour into a greased and floured 13x9 in pan.

Bake at 350 degrees for 30 minutes. Allow to stand for several minutes before cutting. I have used fat free creamer and

 that has worked and also have substituted non fat and light sour cream for the half and half and is still GREAT!

I don't think you will find this recipe a disappointment!
