All-American Cornbread

2 C Biscuit Mix
1 C Butter (I mix half margarine and butter)
1 C Half and half
1 C Yellow cornmeal
1/2 t baking soda
1/2 t salt
3/4 C sugar
2 eggs, slightly beaten
Scald cream with butter, add to thoroughly mixed dry ingredients. Mix in eggs. Pour into a greased and floured 13x9 in pan. Bake at 350 degrees for 30 minutes. Allow to stand for several minutes before cutting. I have used fat free creamer and that has worked and also have substituted non fat and light sour cream for the half and half and is still GREAT! I don't think you will find this recipe a disappointment!
