Freezer Pickles

A delicious snack to serve at your outdoor barbecue or picnic.

4 pounds pickling cucumbers, sliced
7 cups thinly sliced onions
1 cup small cauliflower florets, optional
¼ cup salt
¾ cup water
4 cups sugar
2 cups apple cider vinegar

Combine the cucumbers, onions, cauliflower, salt and water in one or two large bowls. Let them stand at room temperature for about 2 hours. Add the sugar and vinegar and stir until the sugar dissolves. Pack into freezer containers. Cover and freeze. Before serving, let the pickles thaw at room temperature for about 4 hours.

For a change, try adding different spices to the pickles before freezing such as rosemary, dillweed or parsley.
