Almond Oven-Fried Chicken

3 chicken breasts (boned, skinned, but in half)
1 cup flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
2 eggs (beaten)
3 Tbsp. milk
1-1/2 cup almonds (blanched, finely chopped)
2 Tbsp. butter
2 Tbsp. fat
Heat oven to 400F. Coat chicken with dry ingredients. Dip in mixture of beaten
eggs and milk. Roll in almonds. Let stand 10 minutes. Melt butter and fat in
shallow baking pan. Place chicken, skin side down, in pan. Bake 30 minutes.
Turn, bake until tender, about 30 minutes. Serves 6.
