Tangy Hot Potato Salad

2 1/4 Potatoes
1/4 c Cider vinegar
6 Rashers bacon; chopped
2 tb Brown sugar
4 Shallots; sliced
Peel and cube potatoes, place in a wide shallow dish, cover and microwave 10 - 12 MINUTES on HIGH. Stand covered for 5 minutes. Combine bacon and shallots in a bowl, cover and microwave 4 - 5 MINUTES on HIGH. Add vinegar and sugar, mix well. Pour bacon mixture over the potatoes, toss well, reheat covered 3 - 4 MINUTES on MEDIUM HIGH.
