Summertime Pasta Sauce

(makes 4 cups)

2 cups diced tomatoes (about 3 large)
1/2 cup fresh corn kernels
1/2 cup diced pickling cucumber
1/2 cup sliced green onions
1/4 cup diced green bell pepper
1/4 cup plus 2 tablespoon olive oil
1/4 cup chopped fresh cilantro
3 tablespoon fresh lime juice
2 large garlic doves, minced
1 Jalapeno chili, minced
1/2 teaspoon ground cumin

Combine all ingredients in large pan; simmer for 2 hrs. Add salt and pepper to taste. Serve over pasta.
