Beef Stuffed Manicotti

4 manicotti shells
3 qts. boiling water
Salt
1/2 lb. ground chuck
1 sm. onion, finely chopped
1/2 green pepper, finely chopped
1 (15 oz.) can tomato sauce
1 to 1 1/2 tsp. dried oregano leaves
1 tsp. ground thyme
1 bay leaf
1 c. (4 oz.) shredded Mozzarella cheese
Cook manicotti shells in boiling salted water for 10 minutes; drain. Rinse in
cold water; drain and set aside. Sauté ground chuck, onion, and green pepper
until brown; drain. Add tomato sauce, oregano, thyme, and bay leaf; simmer over
low heat 10 minutes. Add 1/2 cup cheese, stirring until melted.
Arrange manicotti shells in two individual baking dishes; stuff with half of
meat mixture. Pour remaining meat mixture over shells; sprinkle with remaining
cheese. Bake at 300 degrees for 30 minutes. Yield 25 servings.
