Indian Rice Pilaf

2 tbsp. oil
1 tsp. mustard seeds
Cut up vegetables: potatoes, carrots, cauliflower, broccoli, peas, string beans,
cashews
1/2 tsp. turmeric
1 c. rice
2 c. water
1 tsp. salt
2 tsp. curry powder
Place oil in Dutch oven, add mustard seeds. Fry until seeds pop. Add vegetables
and fry on low heat for about 5 minutes, with cover on pan. Add turmeric. Wash
and dry rice. Add rice to vegetables and fry for a minute. Do not brown. Add
curry powder, salt and water. Cover and bake at 350 degrees for 20 minutes
