Crusty Tomato-Basil Bites


4 med. ripe plum tomatoes, seeded and chopped
2tbs. finely chopped green or red bell pepper
1tbs. finely chopped red onion
2 garlic cloves, pressed
8 lg. fresh basil leaves
2tbs. olive oil
Salt and pepper, to taste
1 sm. sourdough bread loaf or French baguette
2oz. shredded Parmesan cheese
 

In medium bowl, combine tomato, bell pepper, onion, and garlic. Stack basil leaves. Cut into long, thin strips. Add to tomato mixture w/ oil. Season w/ salt and pepper. Cover. Let stand 1-2 hours for flavors to blend. Diagonally cut bread into long, thin slices. Broil or grill on both sides till golden brown. Spoon tomato mixture onto bread slices. Sprinkle w/ Parmesan and additional pepper. Serve immediately. Yield 8-10 servings
