Cranberry-Apple-Pecan Muffins

3 cups flour
1 1/4 cups sugar
2 Tbsp. baking powder
3/4 tsp. salt
2 eggs
1 large apple (Granny Smith) coarsely chopped, skin and all
2-3 cups cranberries, coarsely chopped
1/2 cup butter, melted
3/4 cup milk
1 cup pecans chopped
Combine all dry ingredients. Add cranberries, apples and pecans. Beat eggs and milk together. Add butter and beat.
Combine dry and liquid ingredients just enough to moisten.
Fill muffin tins lined with paper baking cups (I use an ice cream scoop) and really mound the batter high. Sprinkle with coarse sugar and cinnamon combined.
Make 12 Texas size muffins - bake at 400 degrees - 25 to 30 minutes.
Makes 36 mini muffins - bake at 400 degrees - 20 minutes.
