Cappuccino Muffins

Double the flavor and serve these sweet muffins with steaming cups of cappuccino for breakfast or a mid-morning treat.



2 cups instant baking mix
1/3 cup granulated sugar
1/2 teaspoon nutmeg
1 tablespoon instant coffee
1 egg, beaten
2/3 cup milk
2 tablespoons butter, melted
1/4 cup light brown sugar

For the Glaze
1 cup confectioners’ sugar
1 tablespoon milk

Preheat oven to 400°F. Line 12 muffin cups with paper liners.

In a medium bowl, combine baking mix, granulated sugar, nutmeg and coffee. Add egg, milk and butter; stir until just blended. Do not overmix.

Divide batter evenly among prepared muffin cups. Sprinkle brown sugar over each muffin.

Bake until golden brown and a toothpick inserted in center of muffins comes out clean, about 15 minutes. Cool muffins in pan on a wire rack.

Meanwhile, for glaze, in a small bowl, combine confectioners’ sugar and milk; mix well. Drizzle or spread over cooled muffins.
