Double Macadamia Streusel Banana Muffins

The double layers of macadamia nut streusel make these muffins extra special.
1/4 C sour cream
1 tbsp. sour cream
1 tsp. baking soda
1/2 C butter
1 C sugar
2 large eggs
1 C banana - mashed
2 C all-purpose flour
1/2 tsp. baking powder
1 tbsp. butter - melted
1/2 C brown sugar - packed
1 tsp. cinnamon
1/2 C macadamia nuts - chopped
Preheat oven to 350F. Grease muffin tin. In a small bowl, mix sour cream and
baking soda; st aside. In a large bowl, cream butter and sugar. Add eggs. Mix
well. Add mashed bananas and sour cream mixture until well combined. Add flour
and baking powder. Stir until just incorporated.
In a small bowl mix melted butter, brown sugar, cinnamon and macadamia nuts.
Fill pre-greased muffin tins with batter slightly less than halfway; sprinkle
with streusel mixture. Bake until a toothpick inserted in center of muffin comes
out clean about 25 minutes.
