Chipotle Spiced Black Beans

1 Tab. Butter or Oil
1/2 Cup Red Onion, chopped
2 Garlic cloves, minced
1 - 15 oz. Can of Black Beans, undrained
1/2 cup water
1/4 teas. Crushed red pepper flakes (optional)
2 Chipotle Peppers in Adobo Sauce, diced
Salt and Pepper to taste
Melt 1 tablespoon butter and saute onion and garlic in butter until tender. Add
beans, peppers, water, and crushed pepper, salt and pepper and a teaspoon or two
of the adobo sauce if you like. Bring to boil, reduce heat and simmer 15
minutes. Serve beans topped with a dollop of sour cream and sprinkling of sliced
green onion.
