Source: Cooks Recipes
Become the "star" at your next picnic with this fruit-filled, watermelon showpiece.
Dressing Ingredients:
1/4 cup honey
1/4 cup frozen orange juice concentrate, thawed
1/2 cup LAND O LAKESŪ Sour Cream
1 teaspoon poppy seed
1/4 teaspoon ground ginger
Basket Ingredients:
Large watermelon
Assorted fresh fruit pieces
Combine honey and orange juice concentrate in small bowl. Add all remaining dressing ingredients; mix well. Cover; refrigerate at least 1 hour.
To make watermelon basket, measure and mark a horizontal line around center of melon. Measure and mark 2-inch wide center strip crosswise over top of melon for handle.
Place 1 1/2-inch star-shaped cookie cutter or cardboard pattern on marked horizontal line; trace around with pencil. Repeat, with star tips touching, all around middle of melon. Place star shape in center of 2-inch handle strip; trace around with pencil. Repeat, with star tips touching, over handle. Cut out stars with small sharp knife, leaving bottom points attached to watermelon. Cut out stars on handle, leaving bottom and top tips attached to one another.
Remove rind and melon from bottom half of watermelon. Carefully cut pink melon from handle, leaving white rind on handle. Remove remaining watermelon from basket with melon baller or spoon. Fill basket with assorted fresh fruit pieces. Serve with dressing.
Makes 1 basket (1 cup dressing).
TIP: To make melon basket without star design, follow steps 1 and 2. For step 3, cut around 2 inch wide center strip for handle only. Continue forming basket as described in step 4.
TIP: Melon basket can be prepared one day ahead. Wrap tightly in plastic food wrap and refrigerate. Just before serving, fill with assorted fresh fruit pieces.
