Fruity Couscous Salad

This is a healthy and refreshingly delicious recipe you’ll turn to again and again, both for the kids and yourself! Feel free to use a variety of any colorful—and seasonal—fruit that your youngster likes. Serve on its own for a light meal or snack.
1 1/2 cups water
1 cup orange juice
1 box (10 ounces) instant couscous
1 1/2 cups mixed diced fruit, such as kiwi, cantaloupe and strawberries
1/2 cup golden raisins
Bring the water to a boil in a medium saucepan. Stir in the orange juice, then the couscous. Cover, remove from the heat and let stand until all of the liquid is absorbed, about 5 minutes. Fluff the couscous with a fork and transfer to a large bowl. Let cool completely.
Gently mix in the fruit and raisins. Store in the refrigerator for up to 3 days.
