Stuffed Peaches

2-1/2 Tbsp. unflavored gelatin
1/2 cup water
20-oz. can peach halves, drained, reserving juice
2 cups reserved peach juice
3/4 cup water
1/3 cup lemon juice
8-oz. pkg. cream cheese, softened
1 Tbsp. mayonnaise
1 cup finely chopped walnuts

Place 1/2 cup water in small bowl and sprinkle gelatin over to soften. Drain peaches and add water to juice, if necessary, to make 2 cups. Pour peach juice and sugar into a saucepan and bring to a boil. Add softened gelatin, remove from heat, and stir until dissolved. Add lemon juice. Measure liquid and add cold water to make four cups. Chill until slightly thickened.  Meanwhile, mix cream cheese with mayonnaise and shape into 8-1" balls. Roll in chopped walnuts to coat. Place peach half into individual molds or custard cups and place cream cheese ball in center of each peach. Pour chilled gelatin mixture over all to fill cups. Cover and chill until firm, 2-3 hours. 8 servings
