Romaine-Blueberry Salad

1 head (8 cups) romaine lettuce, washed and torn into bite size pieces
1 cup fresh blueberries (strawberries or mandarin oranges)
½ cup chopped or thinly sliced Vidalia or purple onion
1/3 cup sliced or slivered almonds
1/4 cup sunflower seeds
1 cup shredded Monterey jack cheese
Dressing:
1/3 cup red wine vinegar (or your favorite salad vinegar)
1 tsp. salt
1/4 cup sugar
3/4 cup vegetable oil
1 ½ Tbsp.. poppy seeds
1 tsp. dry mustard
Place all dressing ingredients in a jar. Cover and shake until blended.Drizzle poppy seed dressing over salad. Toss. Or serve the dressing on the side.
