Tomato & Fresh Cheddar Cheese Vinaigrette

One of Quebec's favorite snacks is the fresh cheese curds of the day savoured at room temperature.

6 slices fresh slab cheddar cheese
1 tomato, sliced
2 leaves of lettuce
1 tablespoon white wine vinegar
3 tablespoon virgin olive oil
Salt and pepper to taste
A pinch of dry basil or 2 teaspoons fresh basil

Cover 2 plates with lettuce. Alternate cheese and tomato slices on top of lettuce.

Mix white wine, vinegar, olive oil, salt, pepper and basil and pour over tomato and cheese slices.
