Jambon au sirop d'érable
(Ham with Maple Syrup)
1 ham, 7-8 lb
1/4 cup maple syrup
3 quarts water or maple sap
2 cups raisins
1 tsp dry mustard
2 tsp ground cloves or 10 whole cloves
1/4 cup apple juice
1 cup maple sugar
Stick cloves into ham if using whole cloves. Pour water and maple syrup into roasting pan. Simmer for 3 to 4 hours until ham is tender. Remove excess rind and juices. In a bowl, mix together the maple sugar, ground cloves and dry mustard in 1/4 cup of apple juice. Pour over ham. Add a cup of cooking juice and raisins. Bake at 300° F for 30 to 40 minutes, basting occasionally, adding liquid if necessary. Serve hot or cold.
