Crêpes de la Chandeleur
La Fête de la Chandeleur, celebrated February 2nd, was once very popular in Quebec. It's a celebration to remember the day that the Virgin Mary presented her son to the temple to purify herself and to honour the Lord. On that day parishioners brought their candles to the church to have them blessed by the priest. It was also believed that eating crêpes on that day would assure that the next harvest would be bountiful. An old proverb says:
Manger des crêpes à la chandeleur
apporté un an de bonheur.
(Eating crêpes the day of la Chandeleur will bring a year of happiness)
1 cup all purpose flour
1. In a bowl, beat eggs. In another bowl, mix dry ingredients and add gradually to eggs. Add milk and beat until homogenous. There should be no lumps in the mixture.
2. Heat 1/4 inch oil in a 8" skillet and fry 1/4 cup of crêpe mixture at a time, spreading the dough with the back of a spoon. Fry until golden brown. Turn crêpe over and fry other side until golden brown. Remove excess oil with paper towel and keep in a warm oven until ready to serve. Serve with maple or your favorite syrup.
* If you wish to use a food processor, mix dry ingredients in food processor, mix egg and milk in another bowl and pour into dry ingredients while motor is running. Scrape bowl once or twice if necessary. Mixture is ready when there are no more lumps.
