Chicken "Bonne Femme"
Chicken Good Woman
1 young chicken, 2 to 4 lbs
1/2 cup bacon, diced
20 small onions
1/2 teaspoon thyme
Raw potatoes, cut in large cubes or new potatoes
Parsley and chives, minced
Salt and pepper
1. Tie up chicken. Fry bacon, brown chicken in the melted fat, over medium heat.
2. Add onions, salt and pepper. Season with thyme. Cover and bake for 30 minutes at 400°F.
3. Add potatoes. Cover and bake for 25 minutes more or until chicken is tender.
4. Garnish with parsley and chives. Serve.
