Canadian Duck A La Habitant


Yield: 4 Servings

Ingredients

      2 c  Cubed roast duck
      2 tb Butter
      1 tb Flour
      2 tb Minced ham
      2 tb Minced onion
      2 tb Minced celery
      2 tb Minced green pepper
      2 tb Minced parsley
    1/2 ts Salt
    1/4 ts Freshly-ground black pepper
    1/2 ts Paprika
      1 c  Consommé
    1/2 ts Ground allspice
      1 pn Grated mace

Instructions

Melt butter; mix flour in smoothly. Add ham, onion, celery, green pepper,
parsley, salt, pepper, and paprika. Cook, stirring, for 2 minutes. Add
consomme, allspice, and mace, and simmer for 1 hour. Strain, return to
pot, and add duck meat. Cook slowly only long enough to heat meat through.
This recipe yields 4 servings.
