Ziti al Pomodoro e Tonno

(Ziti with Tuna & Tomato Sauce)

1 lb. plum tomatoes

2 oz. olive oil

2 salted fresh anchovies cleaned and de-boned (2 flat filets)

1 medium onion chopped

1 clove garlic

2½ oz. olive-packed tuna chopped

pinch black pepper

¾lb. ziti

Cut tomatoes in small pieces and remove seeds.  Heat oil in skillet with anchovies, onion and garlic over low flame.  Cook until anchovies are dissolved.  Sauté for 5 minutes, then add tomatoes.  Cover and cook for 20 additional minutes.  In the interim, cook ziti in lightly salted boiling water until al dente.  Add tuna and a pinch of black pepper to sauce.  Mix with ziti and serve.  Serves 4.
