Turkey and Sausage Gumbo

1 cup roux 

1 large onion, chopped

1 medium bell pepper, chopped

1 1/2 lbs. polish sausage, cut in 1/4 thick pieces

4 cups leftover turkey, boned

1 bunch onion tops, chopped

1 bunch parsley, minced

4 tsp. salt

1 tsp. each black pepper and cayenne 

3 cups rice 

In a frying pan, sauté onion and bell pepper in roux until wilted. Add sausage and cook until sausage is browned. Add 1 quart cold water, stir, and transfer to a gumbo pot  Add turkey. Add 2 quarts warm water. Cook slowly for 1 1/2 hours. Add onion tops, parsley, salt, and pepper. Cook for 15 minutes longer. Serve over rice.
