Herring in tomato sauce
This is another way of preparing herring from the Poznan
region of Poland. This is Ewa Mahey's recipe.
You will need:-
1 large packet of fillets of Herring in oil
1 can of plum tomatoes
3-4 onions
1-2 bay leaves
4-5 whole cloves
salt, pepper, sugar
oil (for frying onions)
Strain herring fillets through the sieve and rinse with
cold water individually.
Fry diced onions in oil with salt and bay leaves until
transparent, and add sieved tomatoes, cloves, season to taste with salt, pepper
and sugar and simmer for approximately 5 minutes mixing frequently. Cool
down.
Cut the herring into bite sized pieces, pour over with
sauce and mix gently. Leave to stand in fridge for approximately 1 hour
before serving. Store in a jar in the fridge.
